There is a distinct drawback in restricting carbohydrate intake and thus not allowing yourself to eat anything with white flour in it: you will miss out on pies. Oh, lovely pie.
While this variety isn't exactly a fantastic replacement, it is on your average day a good enough substitute. It is really quick and simple too. So here goes, taco pie in an egg shell, served with guacamole.
Found this through the Swedish LCHF site kolhydrater.ifokus.se, here is the recipe in Swedish, including step by step photos.
Ingredients for "pie crust"
4 eggs
1 dl cream
2 tbsp butter
Ingredients for "pie filling"
400 gr minced meat
1 garlic clove, finely chopped
1/2 dl water
1 tbsp tomato puree
1 onion, sliced or chopped
2 tomatoes, sliced
1 dl grated cheddar cheese
1/2 dl cream
1/2 dl creme fraiche
spices of your choice (taco-ish)
butter for frying
Method
Start your oven and set it to 225 degrees Celsius.
Start with making the "crust". Melt the butter in a pie tin in the oven and mix in a bowl with the cream and eggs. Put mix in the pie tin and bake the eggy crust until it has a nice golden color and has gone all puffy. Take it out to cool off.
Fry the mince meat with garlic and spices, add in the water and tomato puree and let simmer until liquid is gone. Meanwhile, grate the cheese and mix with the cream and creme fraiche.
Pour meat sauce on top of pie crust. Decorate with layers of onion and tomato slices. Finish off with pouring the cheese and cream mixture over the slices.
Bake for 10-15 minutes, until it has a nice colour.
Serve with guacamole and a crispy salad.
